Bacon and guacamole open sandwich

    packet (250g) back bacon
  • 15
    Westfalia Natural Avocado Oil
  • 2
    corn cobs
  • 200
    Westfalia Spicy Guacamole
  • 8
    slices of bread
  • 1
    cos lettuce
  • 2
    ripe tomatoes - sliced
  • Salt and ground black pepper

Preheat oven grill. Grill bacon until crispy. Set aside.

Rub corn with oil and grill until slightly charredon all sides. Allow to cool then slice corn from cobs.

Spread guacamole onto bread slices. Layer lettuce, tomato and bacon on top.

Scatter over corn. Season and serve.
