Dukkah chicken skewers

    chicken fillets, skinned
  • Deboned and sliced into strips

    cake flour
  • 20
    chicken or meat rub
  • 2
    (100 g each) Egyptian
  • Dukkah
  • Oil for deep-frying
  • Basil mayonnaise
  • 330
    Good quality mayonnaise 200 ml basil pesto
  • 200
    basil pesto
Servings: Change Serving


Thread the chicken strips onto long bamboo skewers. Whisk the eggs in a bowl.
Mix the flour and meat rub in another bowl and put the dukkah in a third bowl. Dip the chicken strips into the flour mixture, then into the egg and finally into the dukkah.
Deep-fry for 5-10 minutes in heated oil, or until just done.

Basil mayonnaise:Blend the mayonnaise and pesto, spoon into a bowl and serve with the dukkah chicken skewers.
