Baked apples with raisins and marmalade

Ingredients (8)

125.00 ml wine — fruity white
125.00 ml raisins — seedless
6.00 apples — large green
100.00 ml marmalade — orange
60.00 ml sugar
ALMOND SAUCE
45.00 ml amaretto liqueur
250.00 ml cream — thick
1.00 ml almond essence

Method:

Bring wine to boil in a small saucepan. Add raisins, bring back to boil, then remove from stove and leave to stand, covered, for 15 minutes.
Peel and core apples and place in a baking dish just large enough to hold them, or into 6 individual ovenproof dishes.
Using a slotted spoon, transfer raisins to a bowl and stir in marmalade.
Spoon mixture into hollow in apples. Drizzle raisin-flavoured wine over and sprinkle with sugar.
Bake at 180 ºC for 30 to 40 minutes or until just tender.
SAUCE: Stir Amaretto liqueur into cream and stir in almond essence. Chill until thick and pass round with baked apples.
