Ingredients (12)

500.00 ml flour — cake
2.00 ml salt
10.00 ml Baking powder
60.00 ml butter
1.00 eggs
125.00 ml water
oil — for frying
SYRUP
1.00 kg sugar
375.00 ml water
5.00 ml fresh ginger — grated
2.00 cinnamon — stick
1.00 lemon juice

Method:

Sift flour, salt and baking powder twice. Rub in butter and mix to a pliable dough with egg and water (add water a little at a time). Knead very well.
Leave to rest at room temperature, covered with an inverted mixing bowl, for 3 to 4 hours.
SYRUP: Dissolve sugar in water. Add spices and lemon juice and just bring to boil. Chill very well.
Roll out dough to 5 mm thick, cut into strips 5 cm long and 2 cm wide and cut each strip into 3, but not right through to top. Plait 3 strands, pinching together well at end.
Deep fry in oil on both sides until golden. Remove with a slotted spoon and immediately dip in ice-cold syrup.
Remove with a slotted spoon and leave to drain before next batch is ready to be dipped.
Place syrup bowl in a container of ice cubes to keep syrup cold.
