3 things to do with… potatoes
On a more healthy note I like to lighten up mash by stirring through some watercress or other peppery greens. And with any boiled potato leftovers, I whip up a frittata the next day.
Here are 3 more ways in which to dress them up:

Clever, no? A delicious way to serve potatoes from the braai. (Or you can use the oven). Add chunks of haloumi for a meal on it’s own.
2. Potato rosti
Crispy and scrummy – it brings a smile to any breakfast table. Top with a poached egg, soft cheese or creamy mushrooms.
3. Potato and pea cakes
Guaranteed that you have all the ingredients in your cupboard. Easy cheesy cakes that is great with a salad or as a side to a main meal.
