Potato and sausage frittata

    oil

    large potatoes, peeled and sliced
  • 1
    onion, sliced
  • 300

    sausage, sliced
  • 1
    green pepper, cut into strips
  • 1
    yellow pepper, cut into strips
  • 6
    eggs
  • 20
    ml
    chopped fresh oregano
  • 5
    ml
    salt
  • 5
    ml
    freshly ground black pepper
  • 100
    ml
    pitted black olives
 

Method

Heat the oil and sauté the potatoes over medium heat until brown and soft.
Remove from the pan and set aside.
Sauté the onion, sausage and peppers in the same pan for six minutes.
Return the potatoes to the pan.
Whisk together the eggs, oregano, salt and pepper and pour over the ingredients in the pan.
Scatter the olives on top.
Cover and cook over low heat until the frittata has set.
Cut into wedges and serve immediately with toast.
