Ingredients (9)

250 g bacon — diced
1-2 cloves garlic — cloves
1 onion — chopped
500 ml rice
1 l water
1 can tomatoe paste
2 c vegetables — frozen
1 sprig fresh thyme
25 ml olive oil — or sunflower oil

Method:

Heat Oil and fry Onion ,garlic and Bacon till just starting to brown.Add rice and stirfry for for about 5mins then dissolve stock cube in boiling water and add,then add tomato paste and simmer till rice is done then add sprig of thyme stir and remove from stove.let stand for 15 mins.Serve with green salad.This is a quick meal and can be varied to use leftover meat.It is even delicious eaten cold with mayo or Salad dressing.
