Vegetarian quiche

Ingredients

 
  • 1
    kg
    Butternut
  • 1
    kg
    mushrooms
  • 1
    green/red/yelow peppers
  • 1
    onion
  • 1
    fresh cream
  • 3
    eggs
  • 1
    puff pastry
Servings: Change Serving
 
 

Method

 
Stir fry the butternut, mushrooms, onion, and peppers.
Whisk fresh cream and 3 eggs.
Add salt and black pepper to the egg mixture.
Cut puff pastry into squares.
Grease muffin tin and place pastry squares.
Place the stirfry mixture on the pastry, then the mixture of fresh cream and egg.
Add grated cheese on top of pastry mixture.
Bake for 25 minutes on 180°C.
