Ingredients (14)

2 tbsp fresh chillies — 573
1 tsp garlic — cloves, crushed
1 onion — medium
500 g ground beef — lean
1 can tinned tomatoes
1 can tomato purée
1 tsp fresh basil
1 tsp fresh thyme
1.5 tsp oregano
1.5 tbsp chutney
1 tbsp tomato sauce
2 handful pasta — spaghetti
1 pinch salt
1 handful parmesan cheese — grated

Method:

1. In a large wok or saucepan heat the olive oil on a high heat and add the garlic.
2. Add the chopped onion and allow the onion to become translucent.
3. Add the mince. The mince should be worked so that it breaks up evenly and does not form any lumps. Cook until browned.
4. Turn down the heat to medium and add the canned tomato. You can choose the variation of canned tomato from chopped tomato, whole tomato or even onion and tomato mix.
5. Stir in the tomato puree. This will give the dish a delicious colour.
6. Add the herbs and stir them in.
7. Add the chutney and ketchup and stir.
8. Turn the heat down to a simmer. Stir regularly to avoid the sauce sticking to the pan.
9. Boil a large saucepan of water, and add salt and olive oil.
10. Add the spaghetti and cook according to the instructions on the packet. I recommend a quality imported spaghetti, it makes a big difference.
11. Serve the sauce on top of the spaghetti. Sprinkle with parmesan.
