Ingredients

 
  • chunky veggies of your choice
  • 100
    g
    bacon pieces
  • 15
    ml
    olive oil
  • herbs
  • 1/2
    Feta Cheese (1/2 whee)
  • 8
    Baby Tomatoes
  • handful
    Rocket Leaves
  • 1
    Leek cut in small pieces
  • 6
    Olives
  • 3
    Peppadews halved
  • Balsamic Vinegar & Olive Oil Salad dressing

Method

 
Cut Veggies chunky (potato, butternut, mealies, red & yellow peppers, mushrooms & broccoli Sprinkle with herbs Add Bacon pieces Drizzle with olive oil Bake in the oven for 30 min covered with foil on 180degrees and another 15min uncovered to brown. Layout veggies and bacon on rocket leaves Add baby tamatoes, feta, olives, peppadews Salt & pepper to taste (optional) Drizzle balsamic vinegar & olive oil salad dressing (optional)
