Potato salad

Tuck into this easy as pie dish.

Cooking time: 25 mins


  • 1/2
    red, green and yellow peppers
  • 500
    grated chedder cheese
  • 250
    diced bacon
  • 7
    medium sized potatoes
  • 1
    packet of bacon and onion dip
  • 1/2
    tin of condensed milk
  • 400
  • 4
  • Salt and pepper to taste


Boil potatoes until soft. Let it cool for a few minutes and peel off skin. Cut into slices and place in bowl. Boil eggs. Peel and slice and add to bowl with potatoes.
Fry diced bacon until crispy and throw in with the potatoes. Dice up the green, yellow and red peppers and place in bowl with potatoes and bacon.
Mix bacon and onion dip, condensed milk and mayonnaise together. Add salt and pepper to taste with the mixture. Pour over the potatoes, bacon, peppers and eggs. Add the cheese and mix thoroughly. Place in fridge for 1hour and enjoy!
