Ingredients

 
  • 1/4 cup table wine
  • 250
    ml
    cream
  • 15
    ml
    home-made apricot jam
  • 15
    ml
    mild chutney
  • 10
    ml
    tomato puree
  • 15
    ml
    home-made apricot jam
  • 1
    big tin of litchis
  • 5
    ml
    olive oil
  • Juice and grated skin of half a lemon/lime
  • 400
    ml
    mayonnaise
  • 2
    onions, chopped
  • 750
    ml
    roasted chicken (skin removed and sliced into bite
  • 5
    ml
    curry powder
 
 

Method

 
1. Sauté onions in oil until transparent and then add curry powder, chutney, jam, wine, tomato paste, lemon juice and the juice from the tin of litchis. Mix in 15ml mazina to thicken.
2. When sauce has thickened, allow to cool.
3. Then add the mayonnaise and cream.
4. Lightly stir the sauce through the pieces of chicken. Place in a beautiful glass salad bowl and allow to cool.
5. Serve on shredded lettuce and decorate with fresh or tinned litchis.
6. Serves 10 (depending on appetite)
