Easy jambalaya

Ingredients

 
  • 500
    g
    thick country boerewors, cut into 1 inch chunks
  • 3
    large carrots, peeled and grated
  • 1
    red onion, sliced thinly
  • 2
    tomatoes, cubed
  • 60
    ml
    HP sauce
  • braai salt/red meat spice
  • 15
    ml
    olive oil, for frying

Method

 
1. In a medium-sized pot, gently fry onions in olive oil until soft (medium heat). 2. Add boerewors, and braai salt to taste, and fry until browned. 3. Add grated carrot, and continue to fry for another 2-3 minutes, until the carrot has wilted slightly. 4. Add tomatoes, and continue to stir for another two minutes. 5. Turn heat to low, add HP sauce, and stir well. 6. Continue to cook slowly for another 10-15 minutes. If jambalaya becomes dry or sticks to the bottom of the pot, add a little boiling water from the kettle, and/or a little more HP sauce. 7. Serve over white or brown rice, cous-cous, or mashed potatoes.
