Creamy chicken and asparagus

Ingredients

 
  • 1
    kg
    chicken
  • 5
    can
    asparagus, salad cut
  • 1
    g
    butter
  • 50
    cloves
    garlic
  • 1
    ml
    flour
  • 50
    ml
    milk
  • 125
    ml
    mayonnaise
  • 125
    ml
    mixed herbs
  • 2
    ml
    Sherry
  • 50
    ml
    cheddar cheese

Method

 
Cook whole chicken, flake and place into serving dish, reserving 125ml stock.
Add asparagus, reserving asparagus juice.
Sauté spring onions and garlic in butter.
Add milk, stock, mayonnaise and asparagus juice, and bring to boil whilst whisking.
Add mixed herbs and sherry, plus seasoning to taste.
Spoon over chicken and asparagus and stir through.
Sprinkle grated cheese on top and place in microwave oven to heat through.
Pop under grill to brown top.
Serve with rice or pasta
