Coronation chicken

Tuck into this delightful dish.

Cooking time: 1 hour 15 mins


  • 4
    deboned chicken breasts
  • Curry powder
  • Mayonnaise
  • 1
    tin of sliced mushrooms
  • 1
    tin of sweet corn


Slice the chicken breasts and cook them in a frying pan with a little oil. Put the sweet corn in a pan with water and cook for about 10 mins. Cook the mushrooms in the same pan as you cooked the chicken for about 10 minutes. In a large bowl add the chicken, mushrooms and sweet corn and then add mayonnaise to coat the entire dish and finally add two dessert spoons of mild curry powder and mix. Refrigerate for a minimum of 1 hour and serve cold with a green salad.
