smoked snoek sandwiches

    smoked snoek, skin and bones removed
  • 60
    ml
    mayonnaise
  • 5
    pinch
    salt
  • 5
    pinch
    freshly ground black pepper
  • 8
    ml
    chopped fresh coriander
  • 45
    ml
    butter, at room temperature
  • 10
    slices of pumpernickel bread
 

Method

Flake the fish and mix with the mayonnaise, salt, pepper and herbs. Butter the pumpernickel.

Spread the fish mixture on half the bread and cover with the remaining slices.

Carefully remove the crusts and quarter each sandwich diagonally.
