Ox liver and onions

Ingredients

  • 750
    g
    ox liver, sliced
  • 3
    Tbs
    oil
  • 2
    large onions
  • 150
    g
    streaky bacon, chopped
  • 2
    tsp
    barbecue spice
  • salt and pepper to taste
 

Method

Season liver with salt and pepper.


Heat oil and fry liver in batches until brown and cooked through. Remove from pan and keep warm.


In the same pan, fry onions until soft and caramelised (add a bit of oil if necessary). Add bacon and fry for 10 minutes. Season with barbecue spice.


To serve, arrange fried liver on a platter and top with fried onions and bacon. Serve with pap. Instead of using ox liver, you can use lamb liver and cook it for a slightly shorter time as it requires less time on the stove.
