Leek and black forest ham salad

    g
    baby leeks
  • 2
    Tbs
    coconut oil, melted
  • smoked paprika, to sprinkle
  • 1/2
    red onion, sliced
  • 3
    eggs, soft-boiled and halve
  • 70
    g
    black forest, speck or parma ham
  • FOR THE DRESSING:
  • 1/2
    cup
    homemade mayonnaise
  • 2
    tsp
    capers, drained
  • 5
    g
    flatleaf parsley, chopped
  • olive oil, for drizzling
 

Method

30 min
 

Place the leeks on a board, brush with melted coconut oil and sprinkle with paprika. Cook on the braai over low coals until softened and charred.

Place the leeks in a bowl, top with red onion, eggs and ham.

For the dressing: Whisk together all the ingredients.

To serve: Serve with the dressing and a drizzle of olive oil.
