LASSI SWEET:
500 ml sour milk — dahi or yoghurt
125 ml water — cold
20 ml condensed milk
20 ml sugar — or sweetener
7 ml cumin — seeds, roasted and crushed
3 ml salt
150 ml ice — to serve
LASSI SALTED:
500 ml sour milk — dahi or yoghurt
125 ml water — cold
7 ml cumin — seeds, roasted and crushed
7 ml salt
150 ml ice — to serve
MINT LASSI:
500 ml sour milk — dahi or yoghurt
125 ml water — cold
20 ml condensed milk
20 ml sugar — or sweetener
125 ml fresh mint
5 ml salt
150 ml ice — to serve
SAFFRON LASSI:
500 ml sour milk — dahi or yoghurt
125 ml water — cold
20 ml condensed milk
20 ml sugar — or sweetener
3 ml saffron — soaked in boiling water
25 ml almond flour
3 ml salt
150 ml ice — to serve
5 ml almonds — chopped, to garnish
5 ml pistachios — chopped, for garnish
lassi — mango
500 ml sour milk — dahi or yoghurt
125 ml water — cold
125 ml mango — pureed
3 ml salt
3 ml mango — powder
3 ml ginger — powder
150 ml ice — to serve
CHAAS:
250 ml sour milk — dahi or yoghurt
250 ml water — cold
7 ml cumin — seeds, roasted and crushed
5 ml salt
150 ml ice — to serve

Method:

Lassi Sweet (Serves 2):
Add all of the above ingredients (except the ice cubes) to a blender and blend for about 5 minutes.

Pour into tall glasses, add some ice cubes, garnish with a pinch of cumin powder and a few coloured sugar crystals before serving.

Lassi Salted (Serves 2):
Add all of the above ingredients (except the ice cubes) to a blender and blend for about 5minutes.

Pour into tall glasses, add some ice cubes, garnish with a pinch of cumin powder before serving.

Mint Lassi (Serves 2):
Add all of the above ingredients (except the ice cubes) to a blender and blend for about 5minutes.

Pour into tall glasses, add some ice cubes, garnish with a few sprigs of mint leaves before serving.

Saffron Lassi (Serves 2):
Add all of the above ingredients (except the ice cubes) to a blender and blend for about 5minutes.

Pour into tall glasses, add some ice cubes, garnish with a pinch of chopped almonds and pistachios before serving.

Mango Lassi (Serves 2):
Add all of the above ingredients (except the ice cubes) to a blender and blend for about 5minutes.

Pour into tall glasses, add some ice cubes, garnish with a pinch of ginger powder and a few pieces of finely chopped fresh or dry mango.

Chaas (Serves 4):
Add all of the above ingredients (except the ice cubes) to a blender and blend for about 5minutes.

Pour into tall glasses, add some ice cubes, garnish with a pinch of cumin powder before serving.

Should be served before eating an Indian meal.
