    bicarbonate of soda dissolved in water

    cake flour, sifted

    muesli

    Weet-bix biscuit

    ProNutro
  • 500

    coconut

Preheat the oven to 180 ºC and spray two baking sheets with non-stick spray. Melt the sugar, butter and syrup and cool slightly. Beat the egg and add the dissolved bicarbonate of soda. Add to the butter mixture. Mix the flour, muesli, Weet-bix, ProNutro and half the coconut. Heat a pan and toast the remaining coconut over medium heat until pale brown, taking care not to burn the coconut. Add to the remaining dry ingredients. Add the flour mixture to the liquid and mix well to form a stiff dough. Press the mixture into the baking sheets (the mixture is enough for about one and a quarter sheets) and bake for about 25 minutes until done. Cool well and cut into small bars or squares. Makes about 50 squares.
