Wild rice salad with dried fruit

    fresh orange juice

    finely chopped onion

    balsamic vinegar

    Dijon mustard

    crushed garlic

    olive or sunflower oil
  • OTHER
  • 300
    g
    white and wild rice mix, cooked according to packet instructions
  • 100
    g
    coarsely chopped pecan nuts, toasted and cooled
  • 375
    ml
    coarsely chopped fresh parsley
  • 180
    ml
    soft dried peaches, thinly sliced
  • SALAD DRESSING
  • 180
    ml
    soft dried apricots, thinly sliced
  • salt and freshly ground black pepper
 

Method

 
Beat all the ingredients for the salad dressing together, except the oil. Gradually add the oil while beating continuously. Drain the rice and mix with the salad dressing, nuts, parsley and dried fruit. Season and chill. Serve at room temperature. Serves 8-10.
