Wholewheat tuna pasta with cherry tomatoes and capers

    wholewheat penne
  • 2x 200

    tins tuna in oil, drained
  • 250
    g
    ripe cherry tomatoes, halved
  • 1
    Tbs
    capers, drained and very finely chopped
  • 2
    Tbs
    very finely chopped red onion
  • 1
    tsp
    lemon zest
  • 90
    ml
    extra-virgin olive oil
  • 90
    ml
    fresh lemon juice
  • sea salt flakes and freshly ground pepper
 

Method

Cook the pasta according to packet instructions.

Drain and return to the warm pasta pot.

Add the tuna, tomatoes, capers, onion, lemon zest, olive oil and lemon juice and mix through well.

Season and serve immediately.
