White sauce

  • 35
    ml
    butter
  • 35
    ml
    cake flour
  • 250
    ml
    milk
  • salt and pepper to taste
 

Method

 
Heat butter in a saucepan.
Once melted, stir in the cake flour. Stir over low heat for 30 seconds, then gradually whisk in the milk.
Continue to stir over a gentle heat until sauce thickens.
Season with salt and pepper and serve on pasta or vegetables, as a base for soufflés and to thicken soups.
