White chocolate parfait

  • 500
    ml
    cream
  • 125
    g
    castor sugar
  • 100
    g
    white chocolate, grated
  • 4
    egg whites
  • 30
    ml
    rum
  • 10
    small to medium meringues
 

Method

 
Whip cream with half the sugar until it forms soft peaks. Fold in 75 g of the grated chocolate. Whisk remaining sugar with egg whites until stiff. Fold in cream mixture and rum. Layer half the cream mixture into parfait glasses, cover with crushed meringues and top with remaining cream mixture. Refrigerate. Decorate parfaits with remaining shaved or grated white chocolate and serve.
