Warm potato and spinach salad

Ingredients

    oil
  • 20
    ml
    lemon juice
  • 10
    ml
    freshly grated ginger
  • 2
    chillies, sliced
  • 410

    small white beans, drained
  • 50

    butter
  • 1
    large onion, finely sliced
  • 5
    ml
    ground turmeric
  • 5
    medium potatoes, peeled and thickly sliced
  • 350
    g
    spinach, trimmed and shredded
 

Method

Mix oil, lemon juice, ginger and chillies (or 5 ml ground crushed chillies) together. Add beans and marinate for 15 minutes. Meanwhile, heat butter in a large frying pan. Add onion and turmeric and fry over medium heat for 3 minutes. Add potatoes and fry for 10 minutes or until soft. Add spinach, a little at a time, until it is wilted. Stir in beans and cook until heated through. Season to taste and serve as a side dish or vegetarian meal. Serves 4.
