Warm ostrich fillet salad with berry dressing

    g
    mixed lettuce leaves
  • 1
    mangetout
  • 410
    g
    mixed berries, drained
  • 250
    ml
    red wine vinegar
  • 30
    ml
    castor sugar
  • 140
    g
    ostrich fillet, sliced into strips
  • olive oil
  • butter
  • salt arid freshly ground black pepper to taste
 

Method

 
Arrange the lettuce leaves and mangetout on each plate. Place the berries, vinegar and castor sugar in a saucepan and heat until the sugar has dissolved. Bring to the boil and simmer for 1-2 minutes. Fry the ostrich strips in the olive oil and butter until just done. Season with salt and arrange on top of the lettuce leaves. Drizzle the hot dressing over the salad and season to taste with salt and freshly ground black pepper.
