Waffles with caramel sauce

    oranges, peeled and segmented
  • orange rind cut into thin strips

    soft brown sugar

    hot water
  • BATTER

    cake flour

    sugar

    ml
    baking powder
  • 2
    extra-large eggs, separated
  • 45

    oil
  • 175
    ml
    sour milk or Bulgarian yoghurt
  • 150
    ml
    milk
  • TOPPING
  • ready made caramel sauce
 

Method

 
1. Dissolve the sugar in the water in a saucepan over low heat. Simmer gently until it becomes syrupy. Add strips of orange rind and simmer until soft. Add orange segments and simmer for 3 minutes. 2. BATTER Sift the dry ingredients into a mixing bowl. Beat the yolks with the oil, yoghurt and milk. Gently mix liquid into the dry ingredients, leaving the mixture slightly lumpy. 3. Grease waffle iron. Whisk the egg whites until stiff and fold into the batter. 4. Spoon the mixture on the waffle iron, close and cook for 4 minutes. Serve with caramel sauce and orange compôte to accompany. Makes 5
