Ingredients (12)

3.00 oranges — peeled and segmented
orange — peel, julienned
60.00 ml brown sugar — soft
60.00 ml water — hot
BATTER
225.00 g flour — cake
30.00 ml sugar
10.00 ml Baking powder
2.00 eggs — extra-large, seperated
45.00 ml oil
175.00 ml yoghurt — Bulgarian or sour milk
150.00 ml milk
TOPPING
caramel sauce — ready-made

Method:

1. Dissolve the sugar in the water in a saucepan over low heat. Simmer gently until it becomes syrupy. Add strips of orange rind and simmer until soft. Add orange segments and simmer for 3 minutes.
2. BATTER Sift the dry ingredients into a mixing bowl. Beat the yolks with the oil, yoghurt and milk. Gently mix liquid into the dry ingredients, leaving the mixture slightly lumpy.
3. Grease waffle iron. Whisk the egg whites until stiff and fold into the batter.
4. Spoon the mixture on the waffle iron, close and cook for 4 minutes. Serve with caramel sauce and orange compôte to accompany.
