Waffles with apple sauce

    extra-large eggs
  • 400
    ml
    milk
  • 1
    instant waffle mix
  • APPLE SAUCE
  • 4
    Granny Smith apples, cored, peeled and sliced
  • 125
    ml
    apple juice
  • 30
    ml
    seedless raisins
  • 60
    ml
    soft brown sugar
  • pinch cinnamon, nutmeg, ground cloves and black pepper
  • 10
    ml
    finely grated lemon rind
 

Method

 
Beat the eggs and milk together and add to the dry sweet mix. Mix well to form a smooth batter. Drop spoonfuls of the batter in a hot waffle pan and bake as described on the pack. Place the apples, juice and raisins in a glass bowl. Cover and microwave on 100 per cent power (HIGH) for 10 minutes. Cool slightly, place apple mixture in a food processor and process to a smooth purée. Add the sugar, spices and lemon rind to the Purée, Microwave uncovered for another 8 minutes to allow the flavours to develop. Serve the waffles with a spoonful of the hot apple sauce and cream or ice cream. Serves 6-8.
