Ingredients (9)

30.00 ml butter
4.00 leeks — thinly sliced
1.00 onion — large, chopped
4.00 potatoes — large, chopped
2.00 stock — chicken
salt and freshly ground black pepper
375.00 ml cream
croutons
fresh chives — to garnish

Method:

Heat butter and oil in a large saucepan over low heat. Add leeks and onion and simmer for 10 minutes, stirring occasionally.
Add potatoes and cook for 5 minutes.
Pour in chicken stock and simmer until potatoes are tender.
Season, cool and purée. Chill well.
Serve with a dollop of cream, croûtons and snipped chives.
