Vegetarian sweet potato pie

    sweet potatoes, peeled and cubed
  • 30
    ml
    milk
  • 100
    g
    savoury flavoured soya mince
  • 3
    carrots, peeled and sliced
  • 150
    g
    green beans, trimmed and sliced
  • 200
    g
    broccoli, broken into florets
  • 100
    g
    baby corn, halved
  • 750
    ml
    water
  • 3
    ml
    dried crushed chillies
  • 5
    ml
    dried origanum
  • 30
    ml
    freshly grated Parmesan cheese
 

Method

55 minutes
 
1. Boil the sweet potatoes in a little water until soft. Drain and mash and mix in the milk. 2. Heat the water in a saucepan and stir in the dry soya mince. Cook, stirring, for 5 minutes. Add the vegetables, chillies and oreganum, cover and allow to simmer for 10 minutes. 3. Spoon mixture into a greased ovenproof dish and top with mashed sweet potato. Sprinkle with grated Parmesan and bake in preheated 180 ºC oven for 30 minutes until top is golden.
