Ingredients (11)

4.00 sweet potatoes — peeled and cubed
30.00 ml milk
100.00 g savoury soya mince
3.00 carrots — peeled and sliced
150.00 g green beans — trimmed, sliced
200.00 g broccoli — broken into florets
100.00 g baby corn — halved
750.00 ml water
3.00 ml dried chillies — crushed
5.00 ml dried oregano
30.00 ml parmesan cheese — freshly grated

Method:

1. Boil the sweet potatoes in a little water until soft. Drain and mash and mix in the milk.
2. Heat the water in a saucepan and stir in the dry soya mince. Cook, stirring, for 5 minutes. Add the vegetables, chillies and oreganum, cover and allow to simmer for 10 minutes.
3. Spoon mixture into a greased ovenproof dish and top with mashed sweet potato. Sprinkle with grated Parmesan and bake in preheated 180 ºC oven for 30 minutes until top is golden.
