Vegetables with peanut sauce

    small cauliflower, cut into bite-size florets

    green beans, thickly sliced

    carrots, peeled and sliced

    small cabbage, shredded
  • 1
    bunch spinach, trimmed and shredded

    bean sprouts

    eggs, hard-boiled, cut into quarters
  • peanut sauce, to serve (see tips)

1. Bring a saucepan of water to the boil. Add cauliflower, beans and carrots and boil for one minute. Remove vegetables and place in a bowl of cold water. Add cabbage, spinach and bean sprouts to boiling water and boil for 30 seconds, then remove and place in cold water. 2. Arrange drained vegetables and quartered eggs on a serving platter. Serve with peanut sauce.
