Vegetable parcels

    large butternut, sliced into wedges
  • 1
    red pepper, sliced into strips
  • 1
    green pepper, sliced into strips
  • 250
    fresh brown mushrooms, sliced into thick strips
  • 200
    baby corn, sliced into chunks
  • 10
    courgettes, sliced into chunks
  • 4
    whole garlic bulbs, tops removed
  • olive oil
  • lemon juice
  • butter
  • salt and freshly ground black pepper


Microwave or steam the butternut wedges and pepper strips for a few minutes until slightly tender. Arrange all the vegetables on a large piece of heavy aluminium foil and baste with olive oil and lemon juice. Dot with knobs of butter and season with salt and pepper. Wrap the vegetables in the aluminium foil and wrap the parcel in another 3 layers of foil. Place the parcel among medium-hot coals and turn occasionally. Check if the vegetables are done after about 20-30 minutes. Serves 6.
