Vegetable macaroni

    macaroni or other pasta
  • 1
    onion, sliced into rings
  • 30

    oil
  • 5
    ml
    curry powder
  • 5
    ml
    garam masala
  • 5
    ml
    ground cumin (jeera)
  • pinch chilli powder (optional)
  • 1
    kg
    mixed frozen vegetables
  • 2
    potatoes, peeled and diced (optional)
  • salt to taste
 

Method

 
Cook the pasta in rapidly boiling salted water till just soft. Drain and set aside. In a large saucepan, sauté the onion in heated oil till just soft. Add the curry powder, garam masala, cumin and chilli powder and stir-fry for about a minute. Add the vegetables and potatoes, mix, reduce the heat and simmer till the vegetables are just tender. Add a little water if necessary. Season with salt to taste. Add the macaroni and mix. Heat till warmed through. Serve with grated cheese. Serves 8.
