    dried or fresh basil, chopped

    oatmeal (process oats in a food processor until fine)

    oats
  • 250
    ml
    water
  • 30
    ml
    olive oil
  • 1
    egg
  • 5
    ml
    salt
 

Method

 
Mix the sliced onion, leek and courgette with the olive oil and basil and leave for half an hour. Mix the remaining ingredients and add the vegetables. Mix well and drop spoonfuls of the batter into a heated heavy-based pan. Fry until lightly brown on one side, turn and bake on the other side until brown. Makes 16 cookies.
