    cake flour
  • 750
    ml
    sugar
  • 15
    ml
    bicarbonate of soda
  • 5
    ml
    salt
  • 500
    g
    margarine
  • 250
    ml
    golden syrup, warmed slightly until runny
  • 10
    ml
    vanilla essence
 

Method

12-15 min per batch
 
Preheat the oven to 180 ºC and spray a few baking sheets with non-stick spray. Sift the cake flour, sugar, bicarbonate of soda and salt together and rub in the margarine. Add the golden syrup and vanilla essence and mix well to form a soft dough. Add a little water if the dough is too stiff. Roll the dough into small balls and arrange on the baking sheets, flattening them slightly. Bake for about 12-15 minutes until pale brown, (The cookies will be very soft). Cool for a few minutes on the baking sheets before removing and cooling completely on wire racks. Makes about 144 cookies.
