    bicarbonate of soda

    unsalted butter, softened

    ml
    sour cream
  • 2
    ml
    almond essence
  • 1
    ml
    vanilla essence
  • 2
    extra-large eggs
 

Method

 
Place dry ingredients in a large bowl and mix well, with a wooden spoon or hand beater. Add remaining ingredients and beat well until smooth and fluffy (about 2 minutes with a hand beater). Butter and flour cake pan, pour in, batter, smooth top and bake at 180 ºC for 40 to 45 minutes, or until golden brown and springy to the touch. Cool in pan for 10 minutes or so before turning out to cool completely on a rack, right side up. Ice with American butter cream (see recipe).
