Tzatiki (yoghurt and cucumber dip)

    cucumber
  • 250
    ml
    Greek yoghurt
  • 2
    garlic cloves, crushed
  • 15
    ml
    olive oil
  • 5
    ml
    white wine vinegar
  • 15
    ml
    dill, finely chopped
  • salt and pepper to taste
 

Method

 
Remove the seeds of the cucumber and grate the flesh. Leave in a muslin cloth (or use a sieve or colander) to strain the liquid.
Mix the flesh with the Greek yoghurt, garlic, olive oil, vinegar, dill and salt and pepper to taste. Mix well.
Makes about 375 ml.

Serve as part of a Meze platter.
