Tuscan chicken

    cloves garlic
  • 10
    ml
    coarse salt
  • 5
    ml
    ground black pepper
  • 45
    ml
    finely chopped rosemary
  • 12
    chicken thighs, deboned and skinned
  • 12
    rashers bacon
  • 12
    fresh bay leaves
  • olive oil
 

Method

 
Mash the garlic cloves with the salt, pepper and rosemary and spread a generous layer of the mixture over the chicken thighs. Wrap each thigh in a rasher of bacon along with a bay leaf. Secure with string. Heat a little oil in a pan and fry the chicken thighs until just done and still juicy. Serve with fresh bread and a salad.
