Tuna and cucumber parcels

    sashimi-quality tuna, cut into large chunks

    crushed garlic

    fish sauce

    cucumber
  • DIPPING SAUCE

    red chillies, chopped

    white wine vinegar

    white sugar

    fresh lime juice

Method

 
Place tuna chunks in a shallow dish. Mix garlic, ginger, citrus juices, sugar and fish sauce together and pour over tuna. Leave to marinate for about 2 hours. Meanwhile, blend dipping sauce ingredients together and set aside. Using a potato peeler, shave long ribbons off cucumber and cut in half. Drain tuna. Wrap a piece of tuna in a cucumber ribbon and secure with a lemongrass stick, simple bamboo skewer or whatever else you can find. Serve with dipping sauce on the side.
