Tuna and butter bean salad

  • SALAD
  • g
    tuna, drained
  • 410

    butter beans, drained
  • 200
    g
    black olives, drained
  • 2
    spring onions, chopped
  • 2
    tomatoes or 250 ml (1 c) cherry tomatoes, cut into bite-sized pieces
  • SALAD DRESSING
  • 1
    clove garlic, crushed
  • 45
    ml
    lemon juice
  • 30
    ml
    olive oil
  • 1
    tomato, skinned and finely chopped
  • salt and freshly ground black pepper to taste
  • FINISH
  • 1
    bunch chicory, rinsed and broken into separate leaves
  • 4
    hard-boiled eggs, quartered
 

Method

 
Mix all the salad ingredients. Mix the salad dressing ingredients. Pour over the salad, cover and leave in the fridge overnight to allow the flavours to blend. Arrange the chicory leaves and quartered eggs along the edge of a salad platter and spoon the marinated salad into the centre. Serves 4-6.
