Tomato tartlets

  • 200
    g
    frozen puff pastry, defrosted
  • 100
    g
    finely grated Colchester cheese
  • 30
    ml
    chopped fresh herbs
  • 1
    punnet cherry tomatoes
  • salt and milled black pepper
  • olive oil
 

Method

10-15 min
 
Roll out the pastry and cut out 7 cm circles with a glass. Place on a baking sheet and press a smaller circle 3/4 of the way through the pastry on the inside. Put a tablespoon of grated cheese in the centre of each pastry case and sprinkle with herbs. Cutoff the bottom end of the tomatoes and arrange 3 on each pastry. Season, drizzle with olive oil and bake for 10-15 minutes until puffed and golden brown. Makes 8-10 tartlets.
