Tomato tart

    slices white bread, crusts removed
  • margarine for spreading on the bread

    medium-sized tomatoes, peeled and sliced
  • salt and freshly ground black pepper

Preheat the oven to 180 ºC (350 ºF). Spray a 20 x 22 cm ovenproof dish with non-stick spray. Spread one side of each slice of bread with margarine and arrange four slices in the prepared dish, spread side facing up. Top with a layer of tomato slices and season with salt and pepper. Sprinkle with a third of the grated cheese. Repeat the layers with four slices of bread, tomato slices, salt and pepper and another third of the grated cheese. Quarter the remaining five slices of bread and arrange on top of the cheese layer. Sprinkle with the remaining grated cheese. Whisk the eggs, milk, mustard and thyme in a mixing bowl. Pour the egg mixture over the bread and leave for 5 minutes. Bake for about 35-40 minutes or until the egg mixture has set. Serves 4-6.
