    onion peeled and finely chopped

    head garlic cloves peeled and finely chopped
  • 30
    ml
    olive oil
  • 115
    g
    tomato paste
  • 1
    kg
    chopped tomatoes
  • 30
    ml
    sugar
  • 5
    ml
    salt
  • 30
    ml
    chopped parsley
 

Method

 
Sauté onion and garlic in heated oil in a large saucepan until softened. Add tomato paste, chopped tomatoes, sugar and salt and simmer until thick. Purée in a blender or food processor until smooth. Stir in parsley and pour into clean, hot bottles. Seal. Makes 1,5 litres (6 cups).
