Tomato phyllo 'pizza'

  • phyllo pastry
  • olive oil
  • salt and milled pepper
  • tomatoes
  • garlic slivers
  • oil-packed sun-dried tomatoes


Lay a sheet of phyllo pastry on a clean dry surface.
Lightly brush with olive oil and cover with another sheet of pastry.
Repeat process to create a 6-sheet stack.
Brush the top layer with olive oil and season with salt and milled pepper.
Arrange thin slices of fresh tomato haphazardly on the pastry. Scatter with thin slices of garlic and slivers of oil-packed sundried tomatoes.
Season and bake in a preheated 200 ºC oven for 10 minutes or until tomatoes have softened.
