Ingredients (12)

3.00 kg tomatoes — peeled and coarsely chopped
5.00 onions — large, chopped
2.00 green chillies — or green peppers, sliced
360.00 g white sugar
750.00 ml vinegar — grape
15.00 ml salt
5.00 ml ginger — ground
5.00 ml curry powder
5.00 ml cinnamon — ground
5.00 ml mixed spice — ground
5.00 ml cumin — seeds, ground
2.00 ml cloves — ground

Method:

Place tomatoes in a large stainless steel saucepan and bring to the boil (don’t add water).
Add onions, followed by the remaining ingredients.
Simmer until the chutney thickens and is no longer watery.
Stir frequently to prevent the mixture from sticking to the bottom of the saucepan.
Bottle in sterilised jars while hot.

Makes 1 litre chutney.
