Tomato chutney

    kg
    tomatoes, peeled and coarsely chopped
  • 5
    large onions, sliced
  • 2
    green chillies or green peppers, seeded and cut into strips
  • 360
    g
    white sugar
  • 750
    ml
    grape vinegar
  • 15
    ml
    salt
  • 5
    ml
    ground ginger
  • 5
    ml
    curry powder
  • 5
    ml
    ground cinnamon
  • 5
    ml
    mixed spice
  • 5
    ml
    ground cumin seed
  • 2
    ml
    ground cloves
 

Method

 
Place tomatoes in a large stainless steel saucepan and bring to the boil (don't add water).
Add onions, followed by the remaining ingredients.
Simmer until the chutney thickens and is no longer watery.
Stir frequently to prevent the mixture from sticking to the bottom of the saucepan.
Bottle in sterilised jars while hot.
Makes 1 litre chutney.
