Tomato and curry pumpkin

    ml
    oil
  • 1
    large onion, sliced into rings
  • 20
    ml
    curry powder
  • 1
    kg
    pumpkin squares
  • 2
    large, ripe tomatoes, skinned and diced
  • 15
    ml
    sugar
  • salt and pepper to taste
 

Method

 
Heat the oil in a saucepan and sauté the onion until glossy. Add the curry powder and stir-fry for about a minute. Add the pumpkin squares and mix well. Add the diced tomato, reduce the heat and simmer until the pumpkin is soft and cooked. Add a little water if necessary. Add the sugar and season to taste with salt and pepper. Serve with rice. Serves 4-6.
