Tomato and bacon pasta

Ingredients

    ml
    olive oil
  • 250
    g
    streaky rindless bacon, diced
  • 1
    aubergine, cubed, salted and rinsed
  • 3
    cloves garlic, crushed
  • 425
    g
    plum tomatoes
  • 20
    ml
    tomato paste
  • 2
    ml
    sugar
  • 25
    ml
    freshly chopped basil
  • 400
    g
    spaghetti
 

Method

25-30 min
 
Heat 20 ml olive oil in a saucepan and fry bacon until crisp. Remove from pan and set aside. Add remaining oil to pan and fry brinjals for 5 minutes until browned. Add garlic, tomatoes, tomato paste, sugar and herbs. Season to taste and simmer gently for 15-20 minutes. Meanwhile, cook pasta until al dente. Serve pasta topped with sauce and sprinkled with bacon. Serves 4.
