    tortillas
  • 4
    roasted red peppers, sliced
  • 500
    ml
    baby spinach leaves
  • 12
    basil leaves
  • 125
    ml
    coriander
  • 12
    olives, mashed
  • 200
    g
    mozzarella cheese, grated
  • 60
    ml
    olive oil, to brush
 

Method

Layer the ingredients onto 4 tortillas. Top with the remaining tortillas and brush with oil.

Heat a non-stick pan over medium heat and cook each side until golden brown and the cheese has melted.

Cut into quarters and serve straight away.
