Toast with anchovies and tomato

    slices brown or rye bread, lightly toasted

    grated Cheddar cheese
  • 1
    large clove garlic, crushed
  • 1
    large tomato, sliced
  • 50
    anchovy fillets, drained


Switch on the oven grill. Arrange the toast on a baking sheet. Divide the cheese evenly between the slices of toast. Sprinkle with garlic and place a slice of tomato on each slice of toast. Arrange the anchovy fillets on top and grill for a few minutes or until the cheese has melted. Serve immediately. Serves 4-6.
