The morning-after omelette

  • 6
    baby potatoes
  • 1
    red pepper
  • 4
    (or use 6) slices lean bacon (fat removed)
  • 4
    jumbo free-range eggs, lightly beaten
  • olive oil
  • salt and milled pepper


Preheat grill.
Boil or microwave potatoes until tender.
Halve or slice into thirds depending on size.
Chop pepper into chunks and chop bacon.
Heat a little olive oil in a smallish non-stick pan.
Add pepper and sauté for 3 minutes.
Add potatoes and bacon and cook for 5 minutes.
Season to taste.
Add beaten egg, cook over a medium heat, agitating the mixture from time to time.
When the egg has just set, about 3 minutes, place the pan under the grill, don't close the oven door unless your pan doesn't have a plastic handle!
Cook until set, about 2 minutes.
